Fully - Customizable Greek Cucumber Salad
Fresh and light, this refreshing salad can be made in so many different ways for many occasions!
2 Large Cucumbers from Loon Organics
1/4 Small-Medium Red Onion, or small bundle of Purplette Bunching onions from Burning River Farm
1 Green Pepper
1/2 Cup + Feta from Shepard’s Way Farms
2 tbs Olive Oil
2 tbs Red Wine Vinegar
Salt + Pepper to taste
Optional:
Add 10 Cherry Tomatoes, or 1 Medium-Large Heirloom Tomato from Nistler Farms, 3tbs Kalamata Olives, 1-2 Sprigs Fresh Oregano, or swap Red Wine Vinegar for Holistic Health’s Herb Infused Vinegar, 1 Can Drained and Rinsed Chickpeas, 1 Clove Garlic
Sarah’s Favorite - Make it a Quinoa or Pasta Salad!
1 cup quinoa or 1lb fusilli or bow-tie pasta from Sunrise Flour Mill

Chicken Apple Slaw with A Café Lurcat-spin
Perfect for lunch or a light dinner on a hot summer night!
1 Rotisserie Chicken, Shredded
1-2 Seasonal apples, Thinly slicked (Cindy prefers Honeycrisp or Braeburn)
Matchstick slices of favorite hard cheese - Manchego or sharp cheddar are Cindy’s favorites! Find your favorite at Shepard’s Way Farms
1/2 Head of Cabbage, Shredded or Julienned
Top with good quality olive oil, red wine vinegar, fresh cracked pepper, sea salt and fresh chive
Optional:
Serve with a slice of watermelon, and an iced tea...Pure summer perfection!
Lemony Calabrian Pasta
Our take on a quick and easy Calabrian Pasta features all Mill-district sourced ingredients from Trader Joe’s and MCFM
1lb Large Loop Pasta from Sunrise Flour Mill
2 Cloves Garlic, for ultimate flavor: Turn to Paste on Cutting Board with a bit of Kosher Salt
1 Medium-Large Shallot, Minced check: Burning River Farm
Splash of Olive Oil for browning Garlic and Shallot
Add 1-2tbs Trader Joe’s jarred, crushed, fermented Calabrian Chili Peppers find in store: Italian Bomba Hot Pepper Sauce
Salt to Taste
Remove from Heat, Plate, and Add:
1-2 Lemons, Squeezed
Parmigiano Reggiano, freshly Shaved or Grated
